Vegan Mayo



This is our Vegan Mayo go-to recipe for any recipe that calls for Mayo. It can be used on sandwiches or used in Cole Slaw or other salads.



Vegan Mayo


Ingredients

  • 1 1/2 cups raw cashews

  • 3 tbsp lemon juice

  • 1 tbsp apple cider vinegar

  • 1/2 tsp salt

  • 3/4 cup water

Directions

  1. Soak the raw cashews in hot water for 5-10 minutes.

  2. Drain the cashews, discard the water and add them to a high-powered blender. Now add the lemon juice, apple cider vinegar, salt, and water. Blend until smooth.

  3. Store in a covered container in the refrigerator for up to 1 week. It will thicken as it cools, making it better for spreading on sandwiches.
